This recipie makes two loaves. You can use fresh or frozen then thawed strawberries, but be sure to include some of the juice with them too Sift together in to a large mixing bowl: 3 C flour 1 tea salt 1 tea baking soda1 tea cinnamon 1 1/2 C sugar Pre heat the oven to 350F and lightly grease 2 8x4 loaf pans. In a sperate bowl, mix: 3 eggs (beaten) 2 1/2 C strawberries 1 1/4 C oil 1 1/4 C pecans (optional but yummie) Take the bowl with the dry ingredients and make a large dent in the center (this is called a well) pour the wet ingredients into the well and mix until blended. Do not over mix! Pour into the 8x4 pans and bake in a 350F oven for 1 hour or until the top springs back when lightly touched.

I've recently made this recipie with coconut instead of pecans, and it worked out pretty well. If you wanted to amke a "tropical version" with starwberries, bananas, and dried pineapple instead of just strawberries the coconut would fit in even better.
Also for a lighter version, subsitute apple sauce for the oil and subsitute 1 cup honey for the sugar (and a Tablespoon extra flour to account for the honey)

I've found that it works with peaches too, just sub in half powered cloves for some of the cinnamon.
